It's Wednesday again. It comes round so quickly. My desk has ATCs on it and as we are going to exchange those soon, I cannot show them. If anyone would like to exchange with me next week, I have a few spare. Please contact me and we can sort out snail mail addresses.
Here is my desk (with the ATCs covered by some paper and postcards):
The red book is a traveling notebook which has started in Australia in October and has already visited several countries. I was asked to share some recipes. So I will cook paella this week and take a picture to go in the book with the recipe.
The wedding card is one I made earlier, ah I mean last week and it is ready for this weekend when we are invited to a wedding. The daughter of one of our neighbours is getting married.
The postcard of Colorado came out of the green envelope.
The red envelope is one from the bank. I was due a new debit card, but it never arrived. Annoyingly I had to suffer a week without my card before they decided they'd better order me another one. Within days I found a new card in my letterbox. Hurray! Today I got another red envelope with a new card in it. Now I have two! So I will have to go to the bank again tomorrow and explain that I now have two and I only need one. My bank is not usually this inefficient so I don't know what went wrong there....

Well, that wedding card is different - I love it! That's the one I'd buy in a shop, I never go for the traditional types, always something different for me :-)

That is a gorgeous, gorgeous wedding card! Love the postcard and the stamps too. It's a shame that in the UK the post office uses those printed stamps - they're so boring! Hi Lisca, trust banks, eh? Luckily yours both came to you. My son thought he'd lost his a few years ago- he hadn't in the end- and ordered a new one. Waited a couple of weeks, then he got a phone call from the bank, asking about an unusual spending pattern from him. He explained he hadn't had the card, turned out they'd sent it to an address he'd lived at over 5 years before, which had now been converted to bedsits! HI Lisca, I love the beautiful wedding card you made, it's really pretty and unusual. I'm going to be cooking paella today funnily enough - I'm practising in readiness for a party we're having soon, so we have been eating quite a few "attempts" at paella just recently! This is mt recipe:
Olive oil
onion or leek, sliced
1 bell pepper (preferably red for colour) chopped.
100 gr meat like chorizo sausage or chicken breast
a few strands of saffron or a tsp turmeric
300 gr rice (paella rice or risotto rice or even long grain rice will do it)
1 litre of stock (fish or chicken according to your preference)
A tbsp tomato concentrate or a chopped up tomato
200 gr frozen peas
400 gr frozen mixed seafood, defrosted.
- Heat the oil in a deep frying pan, then soften the onion or leek and the chopped pepper without browning.
- Add the meat or sausage and fry for a bit.
- Stir in the turmeric or saffron. Add rice until coated by the oils, then pour in the hot stock and add the tomato paste. Bring to the boil and simmer for about 15 min, stirring occasionally.
- Tip in the peas and cook for another 5 min, then stir in the seafood to heat through for a final few minutes cooking until the rice is cooked (it depends what sort of rice you are using. Basmati rice will cook the quickest but it doesn’t look very Spanish).
- Check for seasoning and serve with lemon wedges.
Use the heaviest pan you have. (Le Creuset type is great). It’s important not to let the rice cook dry. Add water if the rice is too dry before it is cooked. Keep stirring and keep an eye on it. When the rice is cooked the stock should all be evaporated and in the end you are practically frying the rice. In Valencia they even let the bottom burn a bit so it gets crunchy, but we don’t do that here.
